Yes There are 2 types of picklist - shared and not shared. Country is a shared picklist type. We mention this text in bold above Values edit section "This Picklist is shared between objects. Changes in the list of values will affect other objects which use this Picklist." You can populate countries again but you will have to fix values in all existing records of the 6 objects manually. If you were under support we would have helped in this process. Also I suggest you take backup of your system on a regular basis. So you can restore to a previous backup or fix data by looking at backup data. Setup -> Administration Setup -> Backup You can schedule a batch job as well to do backups
